There's nothing better than a Columbia Dining spot with a super sweet backstory. Enter: Chef Mike's Sub Shop in Uris Hall, which opened just in time for the start of the Spring semester. Starting Jan. 18, Chef Mike’s Sub Shop at Uris Deli will open for lunch and dinner service, Monday-Friday, 11:00 a.m. – 7:00 p.m.

The super sweet backstory? The Sub Shop is inspired by the sandwiches that Chef Mike’s own grandmother used to make for him when he was young. With this in mind, you'll have to try Chef Mike's Grandma's Special, which is a mixture of Italian sausage (vegan options available) and sautéed broccoli rabe doused with roasted-garlic infused olive oil. Each sub is paired with a choice of soup, fruit, dessert, and beverage. You can get a fuller idea of the menu here. Follow along on Columbia Dining's Instagram stories for the full menu daily.

Chef Mike's Sub Shop is open to Columbia students, faculty, and staff. And mark your calendar for a grand opening event on January 25 (time TBD), which will include a t-shirt giveaway.

Here's exactly how Grandma's Special is made:
